Ingredients

  • 1 cup full-fat buttermilk, warm about 110 degrees
  • 2 1/4 tsp active dry yeast 1 standard packet
  • 3 tbsp granulated sugar
  • 2 large eggs, room temperature
  • 3 tbsp unsalted butter, melted and cooled
  • 1 tsp pure vanilla extract
  • 1/2 tsp salt
  • 3 1/2 cups all-purpose flour plus extra for dusting
  • 4 cups vegetable oil for frying
  • 1 1/2 cups powdered sugar for dusting
  • 1 cup powdered sugar for optional glaze
  • 3 tbsp milk or buttermilk for optional glaze
  • 1/2 tsp vanilla extract for optional glaze

Equipment

  • Deep pot or Dutch oven
  • Thermometer
  • Rolling Pin
  • Mixing bowl
  • Wire rack or paper towels

Method

  1. Proof the yeast: Warm buttermilk to 110 degrees. Sprinkle yeast and a pinch of sugar over it and let sit 8 to 10 minutes until foamy.
  2. Make the dough: Whisk in eggs, melted butter, vanilla, remaining sugar, and salt. Add flour gradually and stir until a soft dough forms. Knead on a floured surface for 5 minutes until smooth.
  3. First rise: Place dough in an oiled bowl, cover, and let rise at room temperature for 1 to 1.5 hours until doubled.
  4. Cut the squares: Roll dough to 1/2 inch thickness. Cut into 2 to 3 inch squares. Rest on a floured tray for 15 minutes.
  5. Fry: Heat oil to 360 to 370 degrees. Fry 3 to 4 squares at a time for 1.5 to 2 minutes per side until deep golden. Do not crowd the pot.
  6. Finish: Drain on paper towels and dust immediately with powdered sugar. Or drizzle with the glaze made by whisking powdered sugar, milk, and vanilla until smooth.

Notes

  • Dough can be made the night before and refrigerated after the first rise.
  • Keep oil temperature steady between 360 and 370 degrees for best results.
  • Do not add too much flour - a slightly sticky dough fries lighter.
  • Best eaten within 1 hour of frying.
  • Reheat leftovers in an air fryer at 350 degrees for 3 minutes.
