Ingredients

  • 16 oz short pasta shells or bowties
  • 4 cups sweet corn kernels
  • 1 tbsp olive oil
  • 0.5 cup mayonnaise
  • 0.5 cup sour cream
  • 1 cup cotija cheese crumbled
  • 0.5 cup fresh cilantro chopped
  • 0.25 cup red onion diced
  • 1 medium jalapeno seeded and minced
  • 2 tbsp fresh lime juice
  • 1 tsp chili powder
  • 0.5 tsp smoked paprika
  • 0.5 tsp salt

Equipment

  • Large Pot
  • Cast-Iron Skillet
  • Large serving bowl

Method

  1. Cook Pasta: Boil the pasta in salted water until al dente. Drain, rinse under cold water until completely cool, and set aside.
  2. Char Corn: Heat olive oil in a skillet over medium-high heat. Add corn in an even layer. Let sit untouched for 4 minutes until charred, then stir and cook for 2 more minutes. Let cool.
  3. Make Dressing: In a large bowl, whisk mayonnaise, sour cream, lime juice, chili powder, smoked paprika, and salt.
  4. Combine and Chill: Add the cooled pasta, charred corn, jalapeno, and red onion to the dressing. Toss well, then fold in the cotija cheese and cilantro. Chill for 1 hour before serving.

Notes

  • Do not stir the corn immediately when you put it in the skillet. Letting it sit undisturbed is the only way to get those dark, flavorful roasted spots.
