Ingredients
  

  • 1 1/2 cups all-purpose flour
  • 1 teaspoon baking soda
  • 1/2 teaspoon salt
  • 3 large overripe bananas mashed
  • 1/2 cup unsalted butter melted and cooled
  • 3/4 cup granulated sugar
  • 2 large eggs room temperature
  • 1 teaspoon vanilla extract
  • 1 cup fresh strawberries diced
  • 1 tablespoon all-purpose flour for coating the berries

Method
 

  1. Preheat your oven to 350°F (175°C) and grease a 9x5 inch loaf pan.
  2. Whisk the 1 1/2 cups flour, baking soda, and salt together in a medium bowl.
  3. Mix the melted butter and sugar in a large bowl, then stir in the eggs, vanilla, and mashed bananas.
  4. Toss the diced strawberries with the remaining 1 tablespoon of flour in a small bowl.
  5. Fold the dry flour mixture into the wet ingredients until just combined, then gently fold in the flour-coated strawberries.
  6. Bake for 55 to 65 minutes until a toothpick inserted in the center comes out clean. Cool in the pan for 15 minutes before transferring to a rack.

Notes

  • Do not overmix the batter once the dry ingredients are added, as this will make the bread tough.
  • Tossing the berries in flour prevents them from sinking to the bottom of the loaf pan during baking.
