Ingredients
  

  • 1 cup unsalted butter, softened
  • 1.5 cups dark brown sugar, packed
  • 1/4 cup granulated sugar plus 1/3 cup for rolling
  • 1 large egg room temperature
  • 1 large egg yolk room temperature
  • 2 tsp vanilla extract
  • 2.66 cups all-purpose flour
  • 1 tbsp cornstarch
  • 1 tsp baking soda
  • 0.5 tsp salt

Method
 

  1. Preheat your oven to 350°F (175°C) and line two baking sheets with parchment paper.
  2. Cream the softened butter, brown sugar, and 1/4 cup granulated sugar together in a large bowl on medium speed for 2-3 minutes until fluffy.
  3. Add the egg, egg yolk, and vanilla extract. Mix until smooth.
  4. Whisk the flour, cornstarch, baking soda, and salt together in a separate bowl. Gradually add this to the wet ingredients, mixing on low until just combined.
  5. Roll the dough into 1.5-tablespoon balls. Roll each ball generously in the extra granulated sugar.
  6. Bake for 8-10 minutes. The edges should be set but the centers will look slightly soft. Let them cool on the pan for 5 minutes before moving to a wire rack.

Notes

  • Store in an airtight container for up to 5 days.
  • For extra soft cookies, slightly underbake them.
