Ingredients

  • 1 roast boneless pork loin 3 pounds
  • 1 tbsp olive oil
  • 1 tsp kosher salt
  • 0.5 tsp black pepper
  • 1 tsp garlic powder
  • 20 oz canned pineapple chunks undrained
  • 0.33 cup soy sauce
  • 0.25 cup brown sugar packed
  • 2 tbsp rice vinegar
  • 1 tbsp fresh ginger minced
  • 3 cloves garlic minced
  • 2 tbsp cornstarch
  • 2 tbsp cold water

Equipment

  • Slow Cooker
  • Skillet
  • Whisk

Method

  1. Season the pork loin with salt, pepper, and garlic powder. Heat olive oil in a skillet over medium-high heat and sear the pork for 2 minutes per side. Transfer to the slow cooker.
  2. Whisk together the undrained pineapple, soy sauce, brown sugar, rice vinegar, ginger, and minced garlic in a bowl. Pour over the meat.
  3. Cook on the low setting for 4 to 5 hours until the internal temperature reaches 145 degrees Fahrenheit.
  4. Remove the pork to a cutting board and cover with foil. Turn the slow cooker to high.
  5. Mix the cornstarch and cold water to make a slurry. Stir it into the slow cooker juices and let simmer uncovered for 10 minutes to thicken into a glaze. Slice the pork and serve with the warm glaze.

Notes

  • Do not overcook the pork; modern pork is lean and dries out quickly past 145 degrees.
  • If using a pork tenderloin instead of a loin, reduce cooking time to 2 hours on low.
