Ingredients

  • 1 lb chipped steak or shaved ribeye, very thinly sliced
  • 12 oz rigatoni or penne pasta
  • 2 tbsp olive oil, divided
  • 1 medium yellow onion, thinly sliced
  • 1 green bell pepper, thinly sliced
  • 1 red bell pepper, thinly sliced
  • 3 cloves garlic, minced
  • 1 tbsp Worcestershire sauce
  • 1 tsp garlic powder
  • 1 tsp onion powder
  • 1/2 tsp smoked paprika
  • salt and black pepper to taste
  • 2 tbsp all-purpose flour
  • 1 1/2 cups beef broth
  • 1 cup whole milk
  • 4 oz cream cheese, softened and cubed
  • 6 slices provolone cheese, torn
  • 1/2 cup shredded mozzarella

Equipment

  • Large skillet
  • Large Pot for Pasta
  • Whisk
  • Cutting board and knife

Method

  1. Cook the pasta in well-salted boiling water until just al dente. Reserve 1/2 cup pasta water, then drain and set aside.
  2. Sear the beef: Heat 1 tbsp oil in a large skillet over high heat. Season beef with salt, pepper, and garlic powder. Spread and sear without stirring for 90 seconds, then remove to a plate.
  3. Cook the vegetables: Reduce heat to medium, add remaining oil. Cook onions and peppers 6 to 7 minutes until softened. Add garlic and cook 1 minute more.
  4. Make the sauce: Stir in flour and cook 1 minute. Gradually whisk in beef broth and milk. Add Worcestershire, onion powder, and smoked paprika. Simmer 3 to 4 minutes until slightly thickened.
  5. Add the cheese: Remove from direct heat briefly. Stir in cream cheese until smooth. Add provolone and mozzarella in stages, stirring between each addition.
  6. Combine: Fold in cooked pasta and seared beef. Toss to coat everything evenly. Adjust salt and pepper. Use reserved pasta water to loosen the sauce if needed.

Notes

  • Pull pasta 1 to 2 minutes early since it finishes in the sauce.
  • Add cheese off direct heat to prevent a grainy sauce.
  • Use freshly torn cheese slices, not pre-shredded bagged cheese.
  • Ground beef works as a substitute for chipped steak.
  • Store leftovers up to 3 days and reheat with a splash of broth.
