Ingredients

  • 2 Black Tea Bags (or 2 tsp loose-leaf)
  • 1 Ripe Mango (or 1 to 1.5 cups frozen)
  • 4 cups Water
  • 2 tbsp Honey
  • Ice for serving
  • Optional: Fresh mango slices or mint for garnish

Equipment

  • Heat-proof pitcher
  • Saucepan
  • Fine-mesh sieve
  • Potato masher or spoon

Method

  1. Brew the Tea: Boil 2 cups of water and pour into a heat-proof pitcher. Add the tea bags and allow them to steep for 10 minutes before removing.
  2. Prepare the Mango Puree: As the tea steeps, place the peeled, diced mango and the other 2 cups of water into a saucepan. Bring the contents to a boil.
  3. Simmer and Mash: Lower the heat and let the mango simmer for about 10 minutes until very soft. Gently mash the mango pieces with a spoon or masher to break them down.
  4. Strain and Sweeten: Pour the hot mango mixture through a fine-mesh sieve directly into the tea pitcher, pressing the pulp to extract all the juice. Stir in the honey until it fully dissolves.
  5. Chill and Serve: Let the tea cool to room temperature, then refrigerate for at least 2 hours. Serve over ice, garnished with fresh mango slices if desired.

Notes

  • Chef's Secret: For the most vibrant flavor, use a very ripe and fragrant mango—Honey mangoes are a fantastic choice! Pro Tip: To avoid a bitter or cloudy tea, never steep the tea bags for more than 10-12 minutes and always let the pitcher cool on the counter before refrigerating. For a convenient shortcut, frozen mango cubes work perfectly; just simmer them a few minutes longer.
