Ingredients
  

  • 1 pound large shrimp peeled and deveined
  • 2 tbsp olive oil
  • 3 cloves garlic minced
  • 0.33 cup Parmesan cheese grated
  • 0.5 tsp Italian seasoning
  • 0.25 tsp kosher salt
  • 0.25 tsp crushed red pepper flakes
  • 1 tbsp fresh parsley chopped
  • 1 medium lemon cut into wedges

Method
 

  1. Preheat your oven to 400 degrees Fahrenheit and line a large baking sheet with parchment paper.
  2. Pat the shrimp completely dry with paper towels, then place them into a large mixing bowl.
  3. Pour the olive oil over the shrimp, tossing well to coat. Add the minced garlic, Parmesan, Italian seasoning, salt, and red pepper flakes. Toss vigorously to distribute the seasonings evenly.
  4. Arrange the coated shrimp in a single layer on the prepared baking sheet, leaving space between each piece.
  5. Roast in the oven for 8 to 10 minutes until the shrimp are pink, opaque, and form a loose C shape. Garnish with fresh parsley and serve with lemon wedges.

Notes

  • Ensure your shrimp are completely dry before tossing with oil, otherwise they will steam instead of roasting.
  • Do not overcook. Pull them from the oven immediately once they turn opaque to prevent a rubbery texture.
