Ingredients
  

  • 1.5 lbs boneless skinless chicken breast, diced
  • 2 medium zucchini, chopped into half-moons
  • 1 tbsp olive oil
  • 1 tsp garlic powder
  • 1 tsp smoked paprika
  • 0.5 tsp salt
  • 0.5 tsp black pepper
  • 1 cup shredded mozzarella cheese
  • 0.25 cup grated parmesan cheese

Method
 

  1. Prep: Preheat oven to 400 degrees Fahrenheit and grease a 9x13 inch baking dish.
  2. Season: In a large bowl, toss the diced chicken and zucchini with olive oil, garlic powder, smoked paprika, salt, and pepper until coated.
  3. Bake: Spread the mixture into the baking dish in an even layer. Bake uncovered for 20 minutes.
  4. Melt Cheese: Remove from oven, top evenly with mozzarella and parmesan cheeses, and bake for another 10 minutes until melted and bubbly.

Notes

  • If your zucchini is extra watery, salt the pieces and let them sit for 10 minutes, then pat dry before mixing with the chicken.
