Ingredients

  • 1 pound lean ground beef raw
  • 1 medium yellow onion thinly sliced
  • 4 medium russet potatoes peeled and sliced 1/4-inch thick
  • 1 cup carrots sliced thinly
  • 1 cup celery chopped
  • 1 cup frozen green peas
  • 10.75 oz condensed tomato soup
  • 14.5 oz diced tomatoes undrained
  • 0.5 cup beef broth
  • 1 tsp kosher salt
  • 0.5 tsp black pepper
  • 1 tsp garlic powder

Equipment

  • Slow Cooker
  • Cutting board
  • Mixing bowl

Method

  1. Layer the sliced onions on the bottom of a lightly greased slow cooker. Add the sliced potatoes on top and sprinkle with half of the salt, pepper, and garlic powder.
  2. Crumble the raw ground beef evenly over the seasoned potatoes. Layer the sliced carrots and chopped celery over the meat, then top with the frozen peas.
  3. Whisk the condensed tomato soup, undrained diced tomatoes, beef broth, and the remaining seasonings in a bowl until smooth.
  4. Pour the tomato liquid evenly over the top layer in the slow cooker. Do not stir.
  5. Cook covered on low for 6 to 7 hours, or on high for 4 hours, until the potatoes are tender.

Notes

  • Ensure potatoes are sliced thinly and uniformly so they cook through completely.
  • Scoop down to the bottom when serving to ensure all layers are plated together.
