Ingredients

  • 2 flatbreads or naan, 8 to 10 inches each
  • 2 boneless skinless chicken breasts, about 5 oz each
  • 1 tbsp olive oil plus more for drizzling
  • 1/2 tsp garlic powder
  • 1/2 tsp Italian seasoning
  • 1/4 tsp salt
  • 1/4 tsp black pepper
  • 3 tbsp pesto store-bought or homemade
  • 1 cup cherry tomatoes, halved
  • 6 oz fresh mozzarella, sliced into rounds patted dry
  • 1/4 cup fresh basil leaves
  • 2 tbsp balsamic glaze for finishing
  • flaky sea salt optional for serving

Equipment

  • Skillet
  • Baking sheet or oven rack
  • Cutting board and knife
  • Instant read thermometer

Method

  1. Cook the chicken: Season chicken with olive oil, garlic powder, Italian seasoning, salt, and pepper. Cook in a skillet over medium-high heat 5 to 6 minutes per side until internal temperature reaches 165 degrees. Rest 5 minutes, then slice.
  2. Preheat oven to 400 degrees.
  3. Build the flatbreads: Spread pesto evenly across each flatbread. Layer mozzarella slices, then scatter cherry tomatoes across the top.
  4. Bake: Place flatbreads on a baking sheet or directly on the oven rack. Bake 8 to 10 minutes until cheese is melted and edges are crisp.
  5. Top and serve: Layer sliced chicken on the hot flatbreads. Add fresh basil leaves, drizzle with balsamic glaze, and sprinkle with flaky salt. Slice and serve immediately.

Notes

  • Rest chicken 5 minutes before slicing to keep it juicy.
  • Pat mozzarella dry before using to prevent a soggy base.
  • Baking directly on the oven rack gives a crispier bottom.
  • Add basil after baking, not before, to keep it fresh and vibrant.
  • Rotisserie chicken works as a shortcut and cuts prep time significantly.
