Cheesy Potato Burritos Comfort Meal

Ingredients
  

  • 1 lb ground beef lean (90/10 recommended)
  • 4 cups frozen tater tots
  • 4 large flour tortillas burrito size (10-12 inch)
  • 2 cups shredded cheddar cheese or Mexican blend
  • 1 packet taco seasoning or homemade blend
  • 1/4 cup water for taco seasoning
  • 1 tbsp vegetable oil for toasting burritos
  • 1/2 cup sour cream optional, for serving

Method
 

  1. Bake or air fry the tater tots according to package instructions until extra crispy and golden brown. Set aside.
  2. Brown the ground beef in a large skillet over medium-high heat, breaking it up into small crumbles as it cooks. Drain excess grease.
  3. Add the taco seasoning and water to the beef. Simmer for 3-5 minutes until the sauce has thickened and coated the meat.
  4. Warm the tortillas in the microwave for 20-30 seconds to make them pliable.
  5. Assemble by placing a handful of shredded cheese in the center of a tortilla. Top with a scoop of seasoned beef, then a line of crispy tater tots, and a little more cheese.
  6. Fold in the sides of the tortilla, then roll tightly from the bottom up to enclose the filling completely.
  7. Heat the vegetable oil in a clean skillet over medium heat. Place the burritos seam-side down.
  8. Toast for 1-2 minutes per side until the tortilla is golden brown and crispy.
  9. Serve immediately with sour cream, salsa, or queso dip.

Notes

  • Ensure tots are extra crispy to maintain texture inside the wrap.
  • Toast the seam side first to seal the burrito shut.
