Ingredients

  • 1.5 pounds boneless, skinless chicken thighs finely chopped
  • 2 tablespoons olive oil
  • 1 tablespoon chili powder
  • 1 teaspoon ground cumin
  • 1 teaspoon smoked paprika
  • 1/2 teaspoon garlic powder
  • 1/2 teaspoon dried oregano
  • 1 teaspoon kosher salt
  • 1 tablespoon fresh lime juice
  • 12 small corn tortillas
  • 1/2 cup white onion very finely diced
  • 1/2 cup fresh cilantro finely chopped
  • 2 whole limes cut into wedges for serving

Equipment

  • Cast-Iron Skillet
  • Mixing bowl
  • Chef's Knife

Method

  1. Chop the chicken into small, uniform half-inch pieces and place them in a bowl.
  2. Mix the meat with olive oil, chili powder, cumin, paprika, garlic powder, oregano, salt, and lime juice until well coated. Let sit for 15 minutes.
  3. Heat a cast-iron skillet over medium-high heat until very hot.
  4. Sear the meat in a single layer without stirring for 3 to 4 minutes to develop a crust. Stir and cook for another 3 to 4 minutes until done.
  5. Warm the corn tortillas in a dry skillet until pliable.
  6. Serve the meat on warm tortillas, topped with diced onion and cilantro, with lime wedges on the side.

Notes

  • Do not over-marinate; the lime juice can make the meat mushy if left for more than four hours.
  • Double up the tortillas for each taco to prevent them from breaking under the weight of the filling.
